Taco Fries

Today was a busy, stressful day. When I was making dinner, (around 5:30) Alex and I ended up having to leave for a few hours rather quickly. Of course, we hadn't had a chance to eat and as we waited and waited we got hungrier. As a mom I silently freaked out a little, because I had nothing on me to hold us over, and the only option was vending machines.

Which sets me on the path of my next project - gluten free grab and go foods that are healthy and address the other food issues we both have. We have a lot of food issues so it is not an easy task. Trust me.

I have never been a big fan of processed foods and I am trying hard to not rely on them now. That has not stopped me from putting a case of Annie's gf Macaroni and Cheese in my Amazon.com cart, though. :o)

This morning I discovered that Marty had eating most of the eggroll stuff so dinner ended up not being some kind of stuffed cabbage soup. That was fine with me, because the goal was to use the leftovers. There is a little bit left which I am sure Marty will polish off in the next day or two.

Last night at Outback the table beside us ordered cheese fries so that was my inspiration for dinner tonight. Because I wasn't here, Christian and Marty ended up oven roasting potato wedges and topping them with taco meat and cheddar cheese. We served with the regular taco fixings. They were actually really good, and since we used potatoes instead of corn tortillas, I did not have to count Weight Watchers points for them.
